Dell Morris is Sous Chef of Proof, an American Canteen, inside Four Seasons Resort Scottsdale at Troon North.
“Chef Morris’ understanding of the restaurant’s all-American concept and ability to push the culinary boundaries made him a natural choice to help lead the Proof culinary team,” says Director of Food & Beverage Bryan Feigenbaum. “We are excited to add his creativity to the Proof kitchen.”
As a native of Arizona, Chef Morris grew up with his grandparents in small town Ft. Thomas, where they grew a bounty of seasonal produce throughout the year. “From a young age, I learned how incredible fruits and vegetables taste when they are grown locally and organically,” says Chef Morris. In addition to a love of produce, Morris learned to appreciate the wildlife around him while hunting and fishing with his father and grandfather. It wasn’t long before Morris, only six years old, was helping out in the kitchen and learning to utilize the harvested ingredients. “Mixing, measuring, whatever my grandmother allowed me to do, I did it,” explains Morris. “I asked so many questions that my grandmother eventually gave me a question quota; which forced me to learn more by doing rather than questioning.” Learning by doing is a practice that Morris continued throughout his childhood and teenage years as he perfected family recipes and refined his culinary acuity.
After high school, Morris was offered a culinary position at Four Seasons Resort Scottsdale. Anxious to feed his culinary curiosity, he joined the Resort and over the course of the next few years, made an impact in every outlet on property including Talavera and servicing groups and weddings with the banquet team. He has spent time assisting additional Four Seasons properties in both Jackson Hole, WY and Vail, CO. Morris’ move into Proof Canteen illustrates his creative talent and desire to expand on Proof’s all-American focus.
“As an Arizona native, I look forward to bringing a true local’s perspective into the food we create,” explains Morris. “Because of my upbringing, I am emotionally connected to the land, people and products that surround us and I am excited to enhance our menu with all Arizona has to offer.” Chef Morris has already brought a new culinary vision to life in Proof’s popular Smokehouse Series, which offers daily house-smoked options adding a rustic, smoky flavor to all-American classics. Morris will no doubt continue to put smiles on the faces of Proof guests with his ties to the local market and his dedication to provide a unique and flavorful experience.
