Steven ‘Chops’ Smith
A native of Reno, NV, Steven ‘Chops’ Smith originally moved to Arizona in high school to continue his dream of a motocross racing career. But after one too many injuries, Smith started looking for a backup plan. He’d always worked part-time in the restaurant industry, starting as a dishwasher at age 12, and decided to put down the handlebars and pick up a knife to attend the Scottsdale Culinary Institute. Working at a variety of top local kitchens, Smith fell in love with the art of pasta making—and met Fat Ox’s future Executive Chef, Rochelle Daniel—at the much-missed NOCA restaurant in Phoenix. Most recently working at Prado at the Montelucia Resort, Smith jumped at the chance to cook alongside Chef/Owner Matt Carter and Chef Daniel, and today he’s the Sous Chef and head pasta maker at Fat Ox.
