CHEF DE CUISINE – MOWRY & COTTON AT THE PHOENICIAN
Chef Tandy Peterson is the Chef de Cuisine for The Phoenician’s much-anticipated, new restaurant, Mowry & Cotton, which opens on October 6, 2017. Incorporating her flair for bold, home-cooked cuisine, Peterson presents a menu of pure, flame-cured Modern American dishes that matches the relaxed vibe of this approachable, local hangout.
Peterson joined The Phoenician in June 2014 as Sous Chef for Il Terrazzo, the resort’s former nouveau Italian restaurant. In this role, she was also responsible for overseeing the daily operations for Afternoon Tea, the Thirsty Camel lounge and 24-hour room service.
In 2016, Peterson’s culinary experience went international with a summer position at Asador Etxebarri in Bizkaia, Spain – rated the No. 10 restaurant in the world. This opportunity allowed her to work side-by-side with Chef Bittor Arguinzoniz, learning Basque techniques and all facets of cooking with a coal grill.
Originally from Pinedale, Wyoming, Peterson has called The Grand Canyon State “home” for the last seven years. An honors student at the Arizona Culinary Institute, she earned her certificate in Culinary Arts in 2010. Prior to joining the AAA Five Diamond resort, Peterson held various chef positions at several area restaurants, including Café Bink, Binkley’s Restaurant and Bink’s Scottsdale.
